Tender Carrots with Maple Birch Syrup Sauce

During the fall fresh carrots are always a favourite of ours from our garden.  This is a simple side dish recipe to add to any meal, it goes great with turkey, chicken and even ham.  The herbs in this recipe are enhanced by the addition of Birch and Maple syrup.  Make this at your next dinner get together, it's sure to be a hit!

Roasted Carrots with Birch Maple Syrup Sauce

Ingredients

1 1/2 pounds of carrots

2 cups water

1/2 tablespoon Fallen Leaves Maple Products Birch Syrup

1/4 cup Fallen Leaves Maple Products Amber Maple Syrup

1 tablespoon fresh parsley

1 tablespoon fresh rosemary 

Salt and Pepper to taste

 

Instructions

1. Peel and cut carrots in 1/2 inch thick pieces.

2.  Place carrots in pan with 2 cups of water.  Simmer on medium-high covered for 8-10 minutes, or until carrots are tender.

3.  Remove any excess water.

4.  Mix together Birch Syrup, Maple Syrup and spices.

5.  Mix  sauce with carrots thoroughly.

6. Serve warm.
